    “…结果表明:物理法和化学法精制均可去除粗鱼油中的色素和杂质,显著降低粗鱼油的酸值和过氧化值(p<0.05),与物理法精制鱼油相比,化学法精制鱼油色泽较浅,酸值和过氧化值较低;精制后,沙丁鱼油中饱和脂肪酸相对含量降低,不饱和脂肪酸相对含量升高;沙丁鱼油中共检测出62种挥发性物质,其中醛类18种,醇类、酮类和酯类各5种,烃类25种,杂环类3种,其他类1种;物理法精制对脱除鱼油中醛类等腥味物质效果较好。综上,两种精制方法都显著提高了沙丁鱼的油品质,化学法精制鱼油的理化指标较优,但工艺烦琐,且需经进一步脱臭处理。 …”

    “…结果表明:51个品种核桃油中含13种脂肪酸,含量较高的依次是亚油酸、油酸、α-亚麻酸、棕榈酸、硬脂酸,这5种脂肪酸总含量约占总脂肪酸含量的99%,不饱和脂肪酸含量高达90%左右;51个品种核桃油中脂肪酸含量差异显著,5种主要脂肪酸中油酸的变异系数最高,为23.14%,α-亚麻酸变异系数次之,为14.86%,亚油酸的变异系数为7.24%;相关性分析发现,硬脂酸含量与棕榈酸含量呈极显著负相关,α-亚麻酸含量与油酸含量呈极显著负相关,与亚油酸含量呈极显著正相关,亚油酸含量与油酸含量呈极显著负相关;通过主成分分析和聚类分析将51个核桃品种分为3类,第1类为中油酸、中亚油酸组,第2类为低油酸、高亚油酸组,第3类为高油酸、低亚油酸组;不同产地核桃油的脂肪酸组成与不同品种核桃油一致,同一品种不同产地核桃油之间脂肪酸含量差异较小,经主成分分析和聚类分析发现甘肃华亭清香核桃单独为一类,其他产地的清香核桃为一类,不同产地的香玲核桃为一类。…”

    “…结果表明:14个核桃品种中,粗脂肪含量较高的核桃品种有小圆、美姑大泡、冕漾等,蛋白质含量较高的核桃品种有陆佳、香酥、白鹤滩米核桃等;香酥为高油酸含量品种,利丰紫瓤、大凉山紫伊核桃晚熟2号为高亚油酸含量品种,盐源早、冬晚、利丰紫瓤为高α-亚麻酸含量品种,盐源早、冬晚、小圆的亚油酸与α-亚麻酸含量比值更接近4;出仁率、粗脂肪含量、棕榈酸含量的变异系数较低,均小于10%,说明这3个指标较稳定;主要经济指标与脂肪酸含量的遗传多样性指数的变化范围为1.57~2.14,其中,出仁率的遗传多样性指数最低,十七碳酸含量的遗传多样性指数最高;三径均值与单果质量存在极显著正相关性,蛋白质含量与α-亚麻酸含量存在显著负相关性,油酸含量与亚油酸含量存在极显著负相关性;经聚类分析,在欧氏距离为20时,14个核桃品种被分为2个组群,小圆、香酥聚为一组,其他12个品种聚为一组。…”
