description Based on the current issues of rice freshness detection methods, such as low accuracy, difficult operation and short detection period, Kongyu131, a rice variety commonly used in beer enterprises, was selected as the research object. By artificially accelerating rice aging, volatile components were identified by headspace solid phase microextraction (HS-SPME) combined with gas chromatography-mass spectrometry (GC-MS) and Heracles NEO ultra-fast gas-phase electronic nose technology. Multivariate statistical analysis was performed by principal component analysis (PCA), hierarchical cluster analysis (HCA) and orthogonal partial least square-discriminant analysis (OPLS-DA). The results showed that 30 kinds of volatile compounds, including alkanes, alcohols, aldehydes and ketones, etc. were detected in different freshness rice samples by HS-SPME-GC-MS. 21 kinds of volatile compounds were detected by Heracles NEO ultra-fast gas-phase electronic nose, and the odor description showed that the rice odor was mainly concentrated in herbaceous and fruity flavor. The results of PCA and OPLS-DA showed that different samples were relatively independent. A total of 10 differential flavor compounds according to P<0.05, variable importance in projection (VIP)>1, such as 2,3-heptanedione and octyl aldehyde, etc. were screened by GC-MS. A total of 7 differential flavor compounds, such as vinylpyrazine and 1-pentene-3-ol were screened by Heracles NEO ultra-fast gas- phase electronic nose. In summary, both GC-MS and Heracles NEO ultra-fast gas-phase electronic nose could better analyze the odor characteristics of different freshness rice and perform rapid and accurate identification.
