Summary:The objective of this thesis focused on the development of a standard model for kitchens located within the Bolívar neighborhood market square. This model would contribute to improving the provision of food preparation and sales services, which are carried out seven days a week. The proposed model aims to improve the efficiency of these kitchens, accompanied by a positive work environment that meets the technical requirements and associated regulations. It also aims to enhance the kitchen image, attracting new customers and improving the income of the cooks and their families. For its development, a mixed methodology with a descriptive approach was implemented. First, the current regulations governing these kitchens were consolidated, including occupational safety, restaurant construction materials, and required space management. The fieldwork included two focus groups, comprised of the market's cooks, the restaurant manager, and professionals with knowledge of plant layout and occupational health and safety. With the information collected, the Systematic Layout Planning (SLP) methodology was implemented, which enabled the use of engineering tools such as CORELAP, route diagrams, and flowcharts to improve the layout of the kitchen hall. Finally, kitchen models were created in AutoCAD; their functionality was evaluated in FlexSim software, yielding results such as displacements and finished products. Using the selected model, a 3D prototype was created in SketchUp software.
